    Manners of chopstick usage

    Bring the chopsticks to your mouth only if you are certain you will not drop anything. Put your hand under the chopsticks only if your palm covers with a napkin. In Japan, it is customary to eat from small bowls held at chest height in front of you. Soup can consumes directly from the bowl. Larger plates and platters are still available.

    Remember to wash your hands before eating

    In many Japanese restaurants, restaurant staff greets you with a handkerchief containing perfume on it. It forms with terry cloth, but disposable towels are also available. Unfold it and thoroughly clean – and only your hands. Even on a hot day, do not dab your face or neck with a napkin.

    Sushi is the main dish

    The way of eating sushi is slightly different. Wasabi is spread directly onto the topping rather than mixed with the soy sauce. In good restaurants, the chef has already done this. The soy sauce uses in the provided bowl and dropped over the sushi. It is acceptable to eat sushi with your hands! With three fingers, grab the side of the sushi, rotate it slightly, and dip only the topping – not the rice! – in the soy sauce. Hold the sushi sideways if using chopsticks. Eat the sushi in one piece, not in bites.

    How do I use the soy sauce to dip the sushi?

    First, use caution! Sushi should not be drenched in soy sauce. Soy sauce and wasabi are both used to enhance flavour. Even if it takes some practise, you should dip the fish side into the soy bowl rather than the rice. Filling the sauce with wasabi and stirring some kind of soup would be a no-no! There are restaurants where the sushi master already applies the appropriate amount of sauce to the sushi.

    Speaking of side dishes, the “Gari” (ginger) serves to balance the taste buds in between for a more enjoyable experience. It is not meant to be eaten with the sushi in one bite.

    Food for warm weather

    Because rice is the most important staple food in Japanese restaurants, it should be consumed in its entirety. However, in groups, it is customary to leave a decency residue. Typically, multiple dishes are ordered and shared. Taking a portion with your own chopsticks is also common. It is best to inquire ahead of time.

    Drinking Etiquette

    Cheers to everyone after they’ve been served drinks. In groups, make sure the person opposite you is still supplied – refill! This attention will be directed at you as well.
